How thick is the glass, and will it affect touch, Face ID or Touch ID?

ARMORA Align Pro: 0.40 mm on the HD version, 0.33 mm on the Privacy version.
ARMORA Align Classic: 0.33 mm on both HD and Privacy.
Camera Lens Protector: 0.20 mm and 0.15 mm depending on the ring.

At that thickness the original touch response is kept, and Face ID and Touch ID work exactly as before.
